I brought my computer and the two bowls with the bread dough along to the neighbor, set up my machine and turned on the oven. It took 40 minutes again to hit about 470F, at which point I pulled out the small part of the combo cooker, dumped the dough into it from the towel, and slashed it. I covered it with the large part of the combo cooker and put it back. This is getting more like routine
now. After 20 minutes, I took the cover off, and baked for 15 more. I chickened out today on both loaves, and later found I should have given it the extra 10 minutes in the oven. Next time I will. The taste is still great, the structure is better than last time, but it could have used more time in the oven.
