I mixed up another batch of English muffin dough today. This time I gave the starter a big head start. That worked out well, the poolish and the starter were ready at the same time. I baked them on the stove the next morning and used a smaller cutter (a glass really, I didn’t have a cutter – I borrowed one the last time). The muffins were smaller so I got 27 out of the batch, but they are just the right size really. Again a big success with the family.
